Njoki pursued her law degree from Strathmore University. She is also a coach volunteer in Africa in the moot currently coaching the University of the Gambia.
She previously served as an intern in the law firm of MWA Advocates substantial work in devolution, civil and criminal litigation as well as legislative drafting. She also served as a legal intern at Kibera Law courts where she worked closely with magistrates and assisted in research for drafting judgements and working in the court’s registry and filing systems.
Njoki is a fun of sports particularly hockey and has been captain of various hockey teams. She also has participated in various international moot competitions including judging the Zambia National Rounds of the Phillip C. Jessup International Law moot Competition
